Pista Kulfi
Ingredients:
4 cups milk
1 slice of bread
4 tsp sugar
1 tsp green cardamom
1 tbsp pistachios
1 tbsp almonds
1 tsp cornstarch
Recipe Method:
Cut the bread in small pieces. Blend bread pieces, cornstarch, and half cup of milk, making smooth paste and set aside.
Boil remaining milk in a pan and bring to boil over high heat, stirring constantly. Lower the heat and cook the milk, stirring constantly, until it has thickened and reduced to half. Add the bread mixture to the milk in pan and cook for 5 minutes, reducing the heat to medium.
Add the sugar and nuts and stir well. Turn off the heat and add cardamom powder. Cool the milk to room temperature and pour into a bowl
Pour the mixture into Kulfi molds, distributing evenly. Cover with plastic wrap or foil and freeze until set for 8 hours.
To serve, remove the ice-cream from the molds by running a sharp knife around the edges of the pista kulfi. Slip each kulfi on to a dessert plate, cut across into slices, and serve.
