MUTTON LEG ROAST (BAKRA EID SPECIAL)..,wo kehte hain Bari der ki meherbaan aate aate ..tu in meherbaan ko 2 days marinate kiya tha ..tu aaj in ko khane ka sharf Mila Aur Sab ko Buhat pasand aaya ...umeed hay aap ko recipe Achi lage ge ..it is one of those luxurious comfort meal that whole family enjoy ..a perfect dish for family gatherings ...RECIPE ..INGREDIENTS ...1 1/2 teaspoon red chilli powder ,2 tbspoon ginger garlic paste ,4 lemon juice ,1 cup dahi ,1 teaspoon garam masala powder ,1 teaspoon zeera powder ,1 teaspoon kuti kaali mirch ,4 tbspoon oil ,3 tbspoon kacha papita ,1 teaspoon red chilli flakes ,1 teaspoon tandoori masala or tikka masala for good colour ....METHOD ....TIPS....(1) Remember if u marinate it for long it will be more juicy n tender (2) always make sharp cuts on mutton leg so that it absorbs marinade well (3) always bake it with covered aluminium foil so that meat will be juicy ,soft n more yummy instead of dry ...(4) when u bake in oven keep the marinated leg on middle rack and a baking tray full of water on Lower rack ..that will help to preserve moisture ....METHOD (1) first wash mutton leg n apply 1 tbspoon vinegar all over and leave it for 20 minutes (2) now with sharp knife make cuts all over (3) in a bowl mix marinade ingredients Achi tarah (4) now apply marinade all over mutton leg when done cover it with aluminium foil n put in refrigerator for 24 hours .....(5) next day take out mutton leg open the foil change the sides n pour lemon juice all over again ..we used 4 lemon juice in this recipe ..first mix two lemon juice in marinade and then pour other 2 lemon juice next day ...,again cover it n put in refrigerator (6) now after 48 hours remove it preheat the oven at 180 c ..put this on middle rack ..water filled tray on lower rack ..after 10 minutes lower the temperature to 170 c n bake it for 3 hours minimum ...divide the time after 1 1/2 hour change its side n further bake another 1 1/2 hour ...enjoy with rice or baked vegetables ..I cooked zeera rice with roast n salad raita ....
